Grilled vegetable halloumi skewers with balsamic glaze

Barbecue season is upon us, and with it the perfect time to enjoy fresh and colorful grilled dishes. Our delicious vegetable halloumi skewers with a sweet and sour balsamic glaze are a tasty side dish not only for you, but also for your loved one, as they are not only tasty, but also easy to eat and digest.

The choice of vegetables is entirely up to you, so you can also adapt the recipe to suit the specific dietary requirements of your carer. Here's the recipe for these easy & summery barbecue skewers that everyone can enjoy:

Ingredients:

  • 300-400g different vegetables of your choice (e.g. zucchinis, red and yellow peppers, cherry tomatoes, sweetcorn, mushrooms, red onions)
  • 200g halloumi cheese, cut into cubes
  • 3 tbsp olive oil
  • 2 tsp dried thyme or Italian herbs
  • Salt and freshly ground black pepper
  • For the balsamic glaze:
  • 100 ml balsamic vinegar
  • 2 tbsp brown sugar

Preparation:

  1. Prepare the vegetables and halloumi: Wash the vegetables, peel if necessary and cut into bite-sized pieces. Thread the vegetable pieces and halloumi cheese alternately onto skewers. Coat with olive oil and season with thyme, salt and pepper.
  2. Prepare the balsamic glaze: Heat the balsamic vinegar and brown sugar in a small saucepan over a medium heat. Stir until the sugar has dissolved, then reduce the heat and simmer until the mixture is reduced by about half and takes on a syrupy consistency. Then remove from the heat and leave to cool slightly.
  3. Grill the vegetable halloumi skewers: Place the skewers on the grill over a medium heat and grill for about 10-15 minutes until the vegetables are soft and the cheese is lightly golden brown. While grilling, brush the skewers occasionally with the balsamic glaze to create a caramelized layer.
  4. Serve: Arrange the grilled skewers on a platter and drizzle with the remaining balsamic glaze. Serve immediately, ideally with a warm flatbread.
